There, tucked behind the back staircase at Bauman’s on Oak, opposite the bamboo blinders, mostly out of sight of the dozen-odd picnic tables lining the crushed stone patio, you can see what might be the most famous oven in Portland.
That fame is mostly due to its provenance. Before it was trucked to town, this big brick oven was owned by chefs Nancy Silverton and Mark Peel at their legendary Campanile, a Los Angeles restaurant with a sister bakery, La Brea, that can still be found at grocery stores across America. But it’s also down to what chef Daniel Green has done with it at Bauman’s, where once a month he and a lean team have been making some of Portland’s best pizza.
