Chef Douglas Katz offered a sneak peek of his newest restaurant, Kiln, in the Van Aken District in Shaker Heights.    🍽️Set to debut on Oct. 22, the American bistro menu offers two dozen shareable dishes, many of which are vegetarian/vegan. Others are refreshed versions of offerings from his beloved 25-year Shaker restaurant, Fire Food & Drink.    🪑The main dining room and rooftop lounge will operate as a single, cohesive dining space, offering seating options both indoors and outdoors.   “I feel that we have been waiting for this as a community since the pandemic,” says Katz, whose company has grown to 150 employees from just a few during the pandemic. “I’m not nervous because, if I think of Fire, it was just me. When I think of Amba and Zhug, it was just (managing partner) Todd (Thompson) and I.
