ALFAJORES🇨🇱 // Latin American Desserts Ep. 5 If you’ve been following for a while, you know I have been posting this recipe for a few years now with some filling variations. Alfajores are iconic and so special to Chileans (as well as to other South Americans!) ✨Ingredients: •1 cup room temp unsalted butter •2 tsp vanilla •1 cup cane sugar •1 egg •3 egg yolks •3 cups corn starch •1 tsp baking powder •2 cups flour •1 can dulce de leche •powdered sugar (for dusting) Preheat oven to 350F. In a large bowl, cream butter, vanilla, and sugar by beating at medium-low speed until airy and fluffy. Continue beating at low speed and add the egg and yolks one at a time until incorporated. In a separate bowl, combine all the dry ingredients (corn starch, baking powder, and flour) using a whisk. Use the paddle attachment of your stand mixer if you have one (or using a wooden spatula like I did) and continue to beat the creamed mixture at low speed, and slowly begin to add in the dry ingredients...
