12 DAYS OF COOKIE RECIPES- DAY 1 🍪
Today we’re trying Raspberry Linzer Cookies!
lifeandsprinkles and I thought it would be so fun to do a cookie baking series counting down to the holidays! We will both be sharing a different recipe each day for the next twelve days so get ready for that cookie swap!
INGREDIENTS:
1/2 cup salted butter, softened
1 1/2 cups powdered sugar
2 large eggs
1 tbsp vanilla
1/2 tsp salt
2 1/2 cups flour
Raspberry jam
Powdered sugar
Place the butter and powdered sugar into a large mixing bowl and beat until light and fluffy.
Add in the eggs and vanilla, then beat again until fluffy.
Fold in the flour and salt, mixing until a soft dough has formed. Wrap and refrigerate for about 1 hour.
Roll out the chilled dough on a floured surface, then cut out discs. Half should have a cut out in the center- this can be done easily with a linzer cookie cutter or a smaller cutter for the middle.
Place cookies onto a baking tray and bake for 6-8 minutes at 350F.
