Never has the term, "saved the best for last" meant as much as it did when I used it to describe our last full meal in Goa which we enjoyed after our hot air balloon adventure. Prepared by Chef Christopher Saleem and his staff at Elevar, it was one long succession of dishes as vibrant as they were delicious. Using the color wheel of India and spices that are native to the region, Saleem then adds an intensely global take to the rest of the plate. Every dish I had was reminiscent of at least 1/2 a dozen countries in some way. Which makes sense given that he lived and/or worked in at least that many countries before deciding to make Goa his home during high season.
