1 fennel quartered

2 tbsp maple syrup
1 tbsp Dijon mustard
1 tbsp salt
1/2 tsp black pepper
1 tbsp fresh thyme
1 tbsp fresh sage chopped
1/3 cup olive oil
For the pesto
1 cup fennel fronds from one fennel bulb
1/4 cup pine nuts
2 tbsp lemon juice
6 tbsp olive oil
1 garlic clove
2 tsp parmesan cheese
