High Protein Pumpkin Chocolate Chip Bread 🎃
This is the most DELICIOUS fall breakfast that is healthy, high protein & will fuel your morning! 🙌
Makes 1 serving: 464 calories, 35g protein, 54g carb, 13g fat
Ingredients:
- 1/2 cup oats
- 1 serving promix vanilla protein powder
- 1/4 cup pumpkin purée
- 1/2 tbsp sweetener (monk fruit, stevia, maple syrup or honey)
- 1/2 tsp pumpkin pie spice or cinnamon
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp vanilla extract
- pinch of salt
- 1/2 cup milk of choice
- 1 tbsp mini choc chips
How to:
- preheat oven to 350F
- add all ingredients except choc chips to a blender
- blend for about 30 seconds until smooth
- pour into a lightly greased 8-10 oz ramekin or oven safe dish (if you have a 10 oz use that since mine rose a lot!)
- top with choc chips
- bake for about 20 mins until risen and lightly golden
- let cool for a few minutes then enjoy!!
