Last week I shared a video of Roberto, our amazing cousin in Rome. He showed us all how to make the perfect aglio e olio and blew our minds with the double boiler trick to infuse our oil with garlic and crushed red pepper.
You all loved that video so much, I wanted to share this next installment of Cooking with Roberto. He made for me one of our Uncle John’s favorites: pasta e ceci or pasta with chickpeas.
Like aglio e olio, pasta e ceci is simple, made of only a handful of ingredients (all of which you probably have in your kitchen right now). But don’t let its simplicity fool you—it is bursting with flavor and packed with fiber and protein.
