Day 7 of Seven Spectacular Sides for the Holidays is here!! Aren’t you so sad that it’s almost over?? Well, how could I conclude these series with anything OTHER than the Holy Grail of Holiday Sides:
Mac ’n Cheese.
Honestly, I wasn’t going to try do Mac ’n Cheese, at first, because so many people have done it and, moreover, it always seemed a little complicated for vegans. But, non-dairy cheeses have come such a long way since I started cutting out dairy and I thought I’d give it a whirl.
The results, as you can see, are magnificent.
As I mentioned at the outset of this series—the steps and ingredients are a 1:1 substitution between vegan and non-vegan. I did NOTHING fancy to “veganize” this recipe. I watched a lot of videos and read multiple Reddit threads to put together a flavor profile I knew I’d like. Thanks, in particular, to my friend goldenbalance for the tip on parsley (though, sorry, I couldn’t bring myself to skip the roux).
