While I was in Chicago for the holiday, my mom taught me how to make her Baek Kimchi or “White” Kimchi. Some people don’t know that there are literally hundreds of different kinds of kimchi. Some are made with cabbage and some are not. Some are red and some are white! Some are made with a paste and others are made with a broth. This Baek Kimchi doesn’t include gochugaru or Korean red chili powder and it has more of a broth than a sauce. It’s incredibly refreshing and cuts through rich proteins and stews, helping to create the perfect bite of food. I’ll be trying to make it myself next week and will post the full recipe then.
