I left my mom with 5 lbs of carrots while I was cooking at her house over the holidays so I’ve been trying to come up with more ways to cook with them! This simple roasted carrot recipe is a total winner, mostly because it uses up carrots in a very low labor way!
Just mix up the following:
-extra virgin olive oil
-garlic
-brown sugar
-salt
-pepper
-fresh thyme
-ground cinnamon
Then, pour the mixture over the top of your carrots. Bake them in an oven preheated to 400° F for about 30 minutes, until they’re fork tender.
Sprinkle with some fresh parsley and toasted sesame seeds. PERFECT!!
