The perfect snack doesn’t exis—
Yes it does, and it’s this protein rocky road. It’s delicious, high in protein, easy to make, and so satiating. I love making a batch of this to have on hand for a sweet treat or snack throughout the week.
Recipe:
1c coconut flakes (toasted*)
1c walnuts (toasted)
1c cinnamon cereal
1/3c vanilla cookie thins
1/3c praline pecans
1/2c coconut oil
2/3c powdered peanut butter
1 scoop transparentlabs whey protein (I used the cinnamon French toast flavor)
Mix the first 5 ingredients together in a large bowl. Melt the coconut oil and add to a small bowl. Combine the powdered PB and protein powder with the coconut oil and mix thoroughly. Add the coconut oil mixture to the dry ingredients and stir until evenly coated. Spread the mixture on a parchment lined sheet (or greased) and put in the freezer for 20-30min. Remove, break into pieces, and enjoy!
