HIGH PROTEIN BLUEBERRY MUFFINS 🧁🫐✨ This is the perfect healthy breakfast to prep for the week! Each muffin has 11g of protein, is made with whole grains, and is sooo delicious! You can grab one on your way out the door, as a pre workout snack, or pack them in lunchboxes! Makes 12 muffins : 143 calories, 11g protein, 18g carbs, 3g fat each Ingredients: - 2 cups oats - 1/2 cup promix vanilla protein powder - 1 tsp baking soda - 1/2 tsp baking powder - 1/2 tsp salt - 2 tsp cinnamon - 1 cup plain greek yogurt - 2 eggs - 1/4 cup maple syrup, honey or agave - 1/3 cup milk of choice - 2 tsp vanilla extract - 1 cup fresh or frozen blueberries How to: - Preheat oven to 375F, and line a muffin tray with paper liners. - Add oats to a blender and blend into a fine oat flour. - Add the oat flour, protein powder, baking soda, baking powder, salt and cinnamon to a large mixing bowl and stir to combine. - In a second bowl whisk together greek yogurt, eggs, maple syrup, milk and vanilla ex...
