Mr. Bruce and I found oyster mushrooms out in the swamp while gatoring! These mushrooms are edible and my favorite way to cook them is fried! Oyster mushrooms grow in shelf-like formations on decaying stumps, logs, and trunks of deciduous trees. They have an oyster-shaped cap, hence the name, with gills that run down the stem. They typically grow with overlapping clusters that are white to light brown with firm, white flesh.
