I love that at this time of year. There is an abundance of vegetables left over from the fall and spring season. This is what gives this time of year. It’s unique color. It feels sacred as the land prepares for winter and a time of rest. As an artist and a chef, I love to lean in to what is around me in nature. This is why I love creating themed food for my clients because it gives me the opportunity to create something unique and immersive, inspiring the guest. That food is not only about the bite, but about where it’s come from And the heritage of the land. for me, Thanksgiving was never a tradition as I grew up in Tasmania., Australia. Although I have mixed emotions about this holiday and it’s origin, I truly do think it’s a beautiful time of year to be thankful for what we have and the future that lies ahead.
