Oh, sweet Spring! It sure is nice to see you! 🌞🪻🌿💐 There is an abundance of delicious early spring foraging! Hairy Bittercress is one thing I have so much of that I don’t know what to do with it all! It’s absolutely delicious and so beneficial! So, I thought… why not use it to make a cake to celebrate Ostara - the equinox - the coming of warmth! It wont be long! Hairy bittercress (Cardamine Hirsuta) is a plant that can be found (or close varieties) in almost every state in the US. Despite its name it is not one bit bitter! It’s a member of the mustard family - however the taste is much milder and herbier. Truly versatile in cooking. Its benefits are many. It’s rich in vitamin C, beta-carotene, calcium, magnesium, and glucosinolates. It’s known for its immune boosting and cancer preventing properties.
