Anise Hyssop. 🌿 The herb I am most drawn to in the garden this year. I find myself going straight to it every morning. It is a beautifully fragrant herb that is very reminiscent of root-beer or licorice. For this cake I paired it with vanilla bean to really drive home that root-beer vibe. I also used dark brown sugar to give a smoky molasses feel that we all love in that soda shop classic! Anise hyssop has a sweetness all its own that makes it ideal in teas and baked goods. It is a native plant to the Great Plains of North America. It is in the mint family. Anise hyssop is antibacterial, has relaxing benefits, and has anti-inflammatory properties. It’s a lovely plant to add to your herb garden or to go foraging for.
