Anyways, recipe below :) Ingredients: -jalapeño pesto: 1c basil, 1/3c grated parmesan, 1/4c olive oil, 1-2 large garlic cloves, 1 1/2tbsp pine nuts, 1tbsp lemon juice, 2-3 slices of jalapeño, salt, pepper -chicken breast -1 egg -flour -panko bread crumbs -ciabatta bread -cherry tomatoes -arugula -red onions -lemon -mozzarella -parmesan -salt, pepper, red chili flakes -olive oil -neutral oil Recipe: -blend together pesto ingredients, taste and adjust to your liking! -to 3 plates add whisked egg, flour, and panko (generously seasoned w salt and pepper). Butterfly and pound chicken until thin and even. Cover in flour, then egg, then panko. -heat a pan on medium heat and add 1-2inches of neutral oil. Once hot add chicken.
