Super easy and delicious lunch idea 🥳 (or anytime of the day meal). Recipe below!!
Ingredients:
-lettuce
-ranch
-chipotle peppers in adobo
-canned corn
-black beans
-sliced black olives
-diced red onions
-feta cheese
-quartered cherry tomatoes
-grilled chicken
-tortillas (for the wrap if you want)
Recipe:
-I had left over grilled chicken and I like it cold in my salads (😝) so prep some before hand and keep in the fridge for easy salads throughout the week!
-drain and rinse the black beans, corn and olives. Store remaining in fridge for future dishes/salads
-mix lettuce, diced onions, tomatoes, beans, corn, olives, chicken, feta cheese in a large bowl
-combine ranch with sauce from the peppers (start with a 1-2tsp and taste to adjust)
-combine everything and wrap like a burrito!!
