Another healthy and high protein lunch idea to make for the week: Thai Peanut Chicken Bowls | 466 cals, 37P, 44C, 15F
I’ve been back on my macro tracking game since the new year started and the gains are gaining and it’s been extremely easy to keep up with eating meals like this! I’m really eating all the same things I normally do just limited fried foods, using less oil in general when cooking, and focusing on getting in high protein meals!
INGREDIENTS:
3 cups jasmine rice
4lbs chicken thighs
1 cucumber thinly sliced
1 cup sliced red cabbage
1 cup pickled carrots
1 cup crushed peanuts
4 limes
1 bunch sliced green onion
½ cup chopped cilantro
PEANUT SAUCE:
1 cup peanut butter powder
½ cup water
2 tbsp soy sauce
1 tbsp rice vinegar
2 tbsp brown sugar
2 tsp chili garlic sauce
½ lime juiced
1 tbsp garlic paste
½ tbsp ginger paste
Dilute with water 1 tbsp at a time to reach desired consistency
