• 1 cup carrots cut into matchsticks
• 1 onion sliced
• 1 bunch scallion roughly chopped
• ¼ cup sesame oil
• ½ cup sugar
• ½ cup dark soy sauce
• 1 tbsp corn syrup
• 1 korean pear
• 4 tbsp ginger
• 6 garlic cloves
• ½ cup water
• sesame seeds topping optional
PICKLED CUCUMBERS:
• 1 whole english cucumber
• 3 garlic cloves minced
• 2 tsp gochugaru
• 2 tsp white sesame seeds
• 2 tsp toasted sesame oil
• 2 tsp sugar
• 2 tbsp rice wine vinegar
