For another installment of plantain balls I bring to you Bolón de Verde with chicharron & chorizo
INGREDIENTS:
3 green plantains
Chicharron
½ lb of chorizo
4oz of shredded cheese
Salt to taste
3-4 tbsp of butter
2 cups of oil for frying
CHICHARRON:
1- 1.5 lb of pork belly
1/2 tbsp peppercorns
2 bay leaves
6 cloves of garlic
2 tbsp salt
2 cups oil for frying
*cover and boil 1 hour, pat dry, then place in fridge uncovered to air dry overnight*
*shallow fry for 8 minutes on each side*
