Shrimp Verde with Cilantro and Lime
Serves 4
Ingredients:
β’ 1 lb. (25-30 count) shrimp, peeled
β’ 1 Tablespoon extra virgin olive oil
β’ Salt and pepper, for seasoning
β’ 16 ounces Cookwell Green Chile Stew (about Β½ of a 33 oz. jar)
β’ Juice of Β½ lime
β’ ΒΌ cup chopped cilantro leaves
For garnish: crumbled Queso fresco, cilantro leaves, lime wedges
Instructions:
1. Heat olive oil in a large pan over medium heat. Add half the shrimp to the pan and season with salt and pepper. Cook shrimp about one minute a side, flip, season again and cook for 1-2 minutes more, just until pink. Use tongs to move cooked shrimp to a bowl. Repeat with remaining shrimp.
