Ingredients:
Kale, chopped
1 onion, sliced
3 cloves of garlic, diced
2 Tbsp. sun dried tomatoes
1 Can of northern beans
1 Cup vegetable broth
1/2 Cup coconut cream
Seasoning mixture of salt, pepper, paprika, cumin, cayenne and garlic powder, to taste
Small amount of avocado oil
Instructions:
1. Add avocado oil to a medium low heat pan
2. Add your onion and garlic to the pan and sauté until onion is translucent
3. Increase heat to medium and add sun dried tomatoes and kale.
4. Add your seasoning and mix, once kale begins to wilt.
5. Add vegetable broth and beans.
6. Let simmer for 5 minutes.
7. Turn off heat and add coconut cream.
8. Mix and enjoy with a side of toast!
