Ingredients for cake:
- 80 g. Steamed Beets
- â…” Cup Unsweetened Almond Milk, 160 ml.
- 1½ Tbsp. Unsweetened Applesauce, 22 g.
- 80 g. Whey-Casein Vanilla Protein Powder
- â…“ Cup + 2 tsp. Flour, 45 g.
- 1 tsp. Baking Powder
Ingredients for frosting:
- ½ cup Nonfat Plain Greek Yogurt, 112 g.
- 15 g. Steamed Beet
- ¼ Cup Whey-Casein Vanilla Protein Powder, 22 g.
- Sprinkles
Instructions:
Preheat the oven to 325°F. Lightly grease a 6-inch cake pan and line it with parchment paper.
Blend steamed beet, almond milk, and applesauce on high until smooth.
In a large bowl, whisk together vanilla protein powder, flour and baking powder.
Add the blended beet mixture to the dry ingredients and fold until just combined. The batter should be smooth and thick.
