To make the compote:
1 1/2 cups diced strawberries
1 cup diced rhubarb
1 tbsp lemon juice
1/4 cup sugar
Add all ingredients to a saucepan over medium heat and simmer for ~10 minutes, until the fruit mostly breaks down (it’s ok to have some larger pieces!) Let cool slightly before using on the sandwich and save leftovers for yogurt, oatmeal, etc.
