The grilled peach paper plane 🍑✈️ Makes 1 drink 1 tsp. neutral high heat oil 1 peach, sliced into quarters or eights, to yield 3/4 oz. puree 3/4 oz. whiskey 3/4 oz. fresh lemon juice 3/4 oz. aperol 3/4 oz. amaro nonino Ice Make it! Heat a grill or cast iron skillet over medium-high heat for a few minutes. Pat the sliced peaches dry and then brush with the neutral oil and grill until golden brown on each side ~2 min per side. Allow peaches to cool and puree in a blender until smooth. Pass through a fine mesh sieve and set aside. In a shaker, add peach puree, lemon juice, whiskey, aperol, amaro nonino, and a handful of ice. Shake vigorously for 25 seconds. Strain into a coupe and top with a fresh peach slice.
