2 (about 6 oz each) baking potatoes, peeled, shredded
1/2 yellow onion, peeled, finely grated (about 1/2 cup)
1 clove Wegmans Peeled Garlic, chopped

Salt and pepper to taste
5 Tbsp Wegmans Vegetable Oil, divided
