March is National Kidney Month and chef Jeffrey Held is preparing a vegetarian dish that will help keep your kidneys happy and healthy: Whole Roasted Cauliflower with Red Pepper Romesco.
Why cauliflower? It's a nutrient-packed vegetable that’s low in calories but high in benefits. Not only is it an excellent source of vitamins C and K, which support immune function, bone health, and wound healing, but it also provides folate, an essential nutrient for cell growth and development. Naturally fat-free and cholesterol-free, cauliflower is also low in sodium.
Joining chef Jeffrey is Dr. Robert Montgomery, chair of the Department of Surgery at NYU Grossman School of Medicine and director of the NYU Langone Transplant Institute. Together they discuss the link between kidney and heart health, and why fresh, whole, unprocessed foods are so good for you.
