There’s a big difference between processed foods and ultra-processed foods.
Humans have been processing food for millions of years — dating all the way back to the Paleolithic era — using methods like drying, smoking, salting, and fermenting. These techniques actually helped preserve nutrients and made foods safer to eat.
But “ultra-processed foods” (UPFs) didn’t become widespread until the 1980s and 1990s — and that’s when we started to see major rises in obesity, metabolic issues, and chronic diseases especially into the 2000s.
Bottom line:
* Traditional processing (like fermenting) can actually boost food’s nutritional value.
* Ultra-processed foods are highly engineered products full of additives, industrial oils, and sugar — and they’re linked to serious health problems.
The goal isn’t to fear all processed food — it’s to limit the ultra-processed kind as much as possible.
