Essentials Series: Spatchcock Chicken
A roasted chicken is one of our go-to’s for an easy weeknight meal, which usually means spatchocking the chicken (removing the backbone and flattening) since it cooks more evenly and takes half the time at only 8-10 min per pound compared to 18-20 min per pound for a whole roasted chicken
Spatchocking a chicken isn’t hard to do, it just requires some great knives. My personal preference and most used knives in the kitchen are my zwilling_usa pro knives.
