Savory Yoast
Grilled zucchini topped with a basil vinaigrette over lemon-garlic siggisdairy skyr on sourdough toast (recipes below)
Lemon Garlic Spread:
Grate one clove of garlic, cracked pepper and salt to taste, lemon zest, juice of half a small lemon plus 2 heaping tablespoons of plain Siggi’s which adds plenty of additional protein and the thick texture of the skyr helps add more substance so that the toast doesn’t get soggy – nothing compares to Siggi’s
Basil Vinaigrette:
Add to a food processor the following — 2 handfuls basil, 1/2 cup olive oil, 1/4 cup red wine vinegar, 1 garlic clove, red pepper flakes, salt then bland to combine
