The warmer weather this week has me craving something FRESH, HBU?! 🙋🏼♀️ I absolutely love the fresh flavors of tzatziki and just had to build a hearty, meal prep-friendly bowl with it. Aside from the star of the show (tzatziki, duh), chicken tenderloins are marinated in a yogurt, olive oil, and lemon concoction, then grilled to juicy perfection. It’s all paired up with cucumbers, tomatoes, lettuce, feta cheese, and served on top of a bed of rice. Be sure to whip up a batch of pickled red onions to really send the flavors over the top!
