I skipped the potatoes and substituted in turnips, which have a similar look and texture to diced potatoes. Turnips have significantly less starch (less than 1/3 that of potatoes), more antioxidants, and taste pretty darn similar when combined with all the other ingredients. •

So am I saying potatoes are terrible and should never be consumed by anyone? OF COURSE NOT! ••

Are they almost pure starch and cause a big spike in blood sugar for most people the way a slice of bread or bowl of pasta would? You betcha!

I still have my fair share of sweet potatoes, yams, and even red potatoes, but I consume them later in the day following a glycogen depleating bout of exercise and alongside plenty of healthy fats and fiber. 👍🏻
