Healthier Buffalo Chicken Taquitos
Ingredients
- 1 ½ cups shredded chicken
- ½ cup cottage cheese
- 2 tbsp buffalo sauce
- 1 tbsp mayo
- 1 tsp ranch seasoning
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup shredded cheese
- 8 small tortillas
- Cooking spray or olive oil
- Lime wedges & guacamole for serving
Directions
1. Preheat oven to 400°F and line a baking sheet.
2. Mix chicken, cottage cheese, mayo, buffalo sauce, ranch seasoning, salt, and pepper.
3. Sprinkle cheese on each tortilla, add filling, and roll tightly.
4. Place seam-side down, spray or brush with oil.
5. Bake 12–15 minutes, flipping halfway, until crispy.
6. Serve with lime and guac.
