Here’s what you need:
4 cups mixed greens or arugula
2 large peaches, chopped
½ cup cherry tomatoes, halved
1/4 cup crumbled followyourheart vegan feta cheese
2 tablespoons pine nuts
2 tablespoons olive oil
1 tablespoon white wine vinegar
2 teaspoons maple syrup
½ teaspoon Dijon mustard
Salt to taste
Add the mixed greens to a large bowl.
Top with peaches, chopped tomato, vegan feta, and pine nuts.
Whisk together the olive oil, vinegar, honey, and a pinch of salt.
