TDT SALAD SERIES 🥗✨ October: Moroccan-style Couscous Salad
This month’s salad is flavor-packed, colorful & easy to prep in advance for a busy week!!Perfect on its own or can be easily bulked up with your favorite protein 👏🏻
For the salad:
1.5 c pearl couscous, cooked according to package
1 c shredded red cabbage
1/2 c shredded carrots
1/2 c slivered almonds
1/4 c green onion, chopped
5 dates, chopped
Big handful of fresh parsley, chopped
Arugula
Spiced vinaigrette:
6 tbsp olive oil
2 tbsp apple cider vinegar
1 tbsp honey
1 tsp ground cumin
1 tsp ground turmeric
1/2 lemon juiced
1/2 tsp of each: salt, pepper, cardamom, garlic powder
Pinch of red pepper flakes
First make the vinaigrette by adding all ingredients to a mason jar, secure lid & shake well until combined. Taste & adjust any seasonings.
