Let’s make lunch for the week! I’ve been struggling with lunches lately so I wanted to share my favorite 10 minute chicken salad for anyone in the same boat! This chicken salad has been my go to for years and years and it never gets old. You can add pecans or walnuts, fresh herbs or swap the grapes for dried cranberries, but I think it’s perfect as is.
Ingredients
Serves 4
Ingredients:
2 chicken breasts from 1 rotisserie chicken, shredded
1/2 cup mayo, Best Foods or Hellman’s is best (you can also do half mayo half Greek yogurt to lighten it up!)
1 cup celery, finely diced
1/2 cup red grapes, cut in half
Salt & pepper to taste
Hawaiian rolls or bread of choice to serve
Instructions:
In a large bowl, stir together all ingredients until combined. Season to taste with salt and pepper & serve cold!
