I make a lemon loaf like once a week during the springtime I just can’t help it. It’s the perfect sweet treat morning, afternoon and night. I have a popular grain free lemon loaf (recipe on my site), but everyone always asks if they can use regular flour so I adapted the recipe. Hope you enjoy!! 🍋
Ingredients:
3 eggs
1 cup granulated sugar
3/4 cup sour cream or Greek yogurt
Zest from 2 lemons
Juice from 1 lemon
1/2 cup olive oil
1/2 tsp vanilla extract
1/4 tsp kosher salt
1 3/4 cup all purpose flour
1 1/2 tsp baking powder
Lemon Slices and zest to garnish
Lemon Glaze:
1 cup powdered sugar
1 tablespoon lemon juice
Instructions:
Preheat oven to 350 degrees.
In a stand mixer or large mixing bowl, beat together eggs and sugar until smooth. Add the zest and juice from one lemon, sour cream, olive oil, vanilla extract and salt. Mix well.
