On Episode 22 of my 20 Minute High Protein Trader Joe’s Dinners Series we’re making a super quick and easy recipe! These Sticky Shrimp Lettuce Cups make the perfect lunch or dinner when you want something light and flavorful with lots of protein. The sauce is so simple to make and you can even serve the shrimp on a rice bowl if you’re feeling something heartier. Don’t skip the crunchy cashews and fresh mint on top though 🤌🏼 Ingredients: 1 lb raw shrimp, defrosted & tails removed (21-30 shrimp per pound) 1 tablespoon avocado or neutral oil  2/3 cup sweet chili sauce  1 1/2 tbsp reduced sodium soy sauce  1 teaspoon sriracha, optional 1/3 cup roasted & salted cashews or peanuts, roughly chopped  Fresh mint to garnish, cilantro and basil would also be great! Sesame seeds to top, optional Iceberg or romaine lettuce cups to serve  Instructions: In a small bowl, whisk together the sweet chili sauce, soy sauce, and sriracha if using. Set aside.
