On Episode 19 of 20 Minute High Protein Trader Joe’s Dinners we have an OG Brocc recipe: One Pot Sausage & Veggie Orzo! When I was on my book tour so many of you greeted me with a sentiment on your favorite recipe and why. It was so fun hearing about your favorite dishes and made me excited to revisit them. This was a popular one and for good reason! It’s quick, easy, delicious and perfect for meal prepping. If you haven’t made it already, you definitely should try it!
Ingredients:
2 tbsp olive oil
1 yellow onion, diced
2 cloves garlic, minced
1 lb Italian sausage, casing removed
1 teaspoon kosher salt, plus more to taste
1/2 teaspoon black pepper, plus more to taste
2 tbsp balsamic vinegar
1 zucchini, diced
1/2 cup sun-dried tomatoes in oil, chopped
4 cups spinach (or two large handfuls)
1 cup uncooked orzo
2 cups chicken broth
3 tbsp grated parmesan cheese, plus more to top
1/4 cup fresh basil, plus more to serve
Balsamic glaze to drizzle
Chili flakes to taste, optional
