IS IT SPRING YET?! Embracing this warm weather here in LA and making my favorite Grain Free Lemon Loaf π This has to be one of my favorite recipes and itβs the perfect way to use up the lemons in my tree π₯°π
Ingredients:
3 eggs
1 cup sugar
1/4 cup sour cream
1 lemon, zested and juiced
1/4 cup olive oil
2 tbsp milk, I use oat or almond
1/2 tsp vanilla extract
1/4 tsp kosher salt
2 cups almond flour
1/3 cup coconut flour
2 tsp baking powder
Lemon Slices and zest to garnish
Lemon Glaze:
3/4 cup powdered sugar
1 lemon, juiced
Instructions:
Preheat oven to 350 degrees.
In a stand mixer or large mixing bowl, beat together eggs and sugar until smooth. Add the zest and juice from one lemon, sour cream, olive oil, milk and vanilla extract. Mix well.
Stir in almond flour, coconut flour, baking powder and salt. Mix both just until everything is combined, being careful not to over mix!
Add batter to a parchment lined or well greased loaf tin. Bake for about 1 hour or until a tooth pick come...
