There is nothing I love more than a loaded seasonal salad 😋 This recipe is so flavorful and the dressing is just perfection!! It gets more flavorful as it sits, so feel free to prepare it a few hours before dinner. Perfect for a holiday party or you can even prep it for a delicious lunch throughout the week!
Serves: 6-8 as a side
For the cranberry orange dressing:
½ of a small shallot, finely minced
Zest of 1 orange
2 tablespoons freshly squeezed orange juice
3 tablespoons cranberry juice
2 tablespoons red wine vinegar
½ cup extra virgin olive oil
1 teaspoon dijon mustard
