A delicious 30 minute sheet pan meal for episode 34 of my Trader Joe’s series! There’s really nothing fancy about this one, but it’s the perfect busy weeknight meal. It’s high protein, packed with veggies and takes just minutes to throw together. You’re going to love it! Ingredients: 1 16 oz package gnocchi 2 bell peppers, chopped into 1-inch chunks 2 zucchini, cut into 1-inch chunks 2 tablespoons extra virgin olive oil, plus more for topping 1 tablespoon @harmonyblends Mediterranean Blend (or Italian seasoning), plus more for topping 1 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper Optional: 1/4 teaspoon red pepper flakes 1 pound uncooked sweet Italian chicken sausage Juice of 1/2 lemon Freshly grated Parmesan cheese Instructions: Preheat oven to 400°F.
