While on maternity leave, I was laid off from my job, and I found myself wondering what was next. Around that time, a new dessert was making waves in Korea—the croffle, a delicious fusion of croissant and waffle. I immediately fell in love with it and knew it could be something special for Minnesotans to enjoy. Launching The Croffle Corner was a leap of faith, and running a small business brings challenges every day. But it’s also been one of the most rewarding experiences of my life. I’ve had the privilege of meeting so many wonderful people from all walks of life—each with their own unique stories, talents, and passions. They inspire me and remind me how grateful I am for this journey and how far we’ve come.”
