If you’re feeling lazy or the day gets busy, you can whip up a quick spread, refrigerate it, and have it ready for a fast meal. I never thought I’d enjoy sardines, but they’ve grown on me. You can substitute tuna or any leftover salmon. This spread or dip is perfect for a snack or a quick lunch. Enjoy!
Ingredients
1 can of sardines in oil, drained
1/2 cup whipped cream cheese
1/4 cup chopped red onion
1 tbsp old style mustard
1 tsp capers
3 tbsp fresh chives chopped
1 tbsp lemon zest
1 tbsp lemon juice
1/4 tsp cayenne pepper
In medium bowl mash the sardines with a fork.
Add all the rest of the ingredients.
Mix well and refrigerate until ready to serve.
To be served with vegetables, like celery, cucumbers, radishes. Or with crackers, crostini, or make a sandwich with lettuce, tomatoes and cucumbers.
