just 5 ingredients (plus our pantry staples) to get bold, spicy-sweet salmon with roasted brussels. serve it as-is or turn it into a rice bowl.
what you’ll need:
* 2 (16 oz) bags brussels sprouts, trimmed + halved
* 1 tbsp olive oil
* momofuku soy sauce or tamari
* ¼ cup dijon mustard
* ¼ cup brown sugar
* 2 tbsp momofuku chili crunch
* 1½ lbs skin-on salmon, cut into 4 pieces
* momofuku savory seasoned salt
* steamed rice
* scallions + lemon slices (optional)
how to make it:
1. preheat oven to 425ºf.
2. toss brussels with olive oil + 1 tbsp soy sauce. roast for 10 min.
3. mix mustard, brown sugar + chili crunch into a glaze.
4. remove brussels, toss, and nestle salmon (skin-side down) on the pan. season salmon with savory seasoned salt and brush with half the glaze.
5. roast for 12 min more, until salmon is cooked through.
6. stir 1 tbsp soy sauce into the remaining glaze to make a sauce.
