I was absolutely smitten when I saw stayhungree's beautifully subversive take on Pavlova that she serves at herplacesupperclub and had to reverse engineer my own version. Funny how turning something on its head makes it feel so fresh and new! Rhubarb is very in season right now (finally in the farmers' market) but if you're not a fan, strawberries which are going strong too would make a perfect substitute. Or use both!
