Some people say Kale Salad is SO last decade, but I eat it ALL the time. I especially like how leftovers get better as they sit. The raw grated beets in this one give the salad sweetness, juiciness, and crunch. The toasted pepitas give it even more crunch and a salty, nutty flavor. The creamy goat cheese adds, well, creaminess. Oh yeah, I almost forgot about the chickpeas. Overall, this salad is pretty high in protein but you could add a piece of protein on top or serve it as a dinner side. You won't be able to stop eating it, trust me!
