Kid-Approved Afternoon Snack Alert! These Mini Mexican Potatoes are crispy, flavorful, and perfect for little hands to grab and munch. They’re a fun twist on classic roasted potatoes and make a delicious after-school snack or easy side dish for family dinners.
1 lb small potatoes, halved
1 teaspoon olive oil
1/2 cup guacamole
1/4 cup salsa
1/4 cup shredded low-fat mozzarella cheese
Preheat oven to 400°F. Season potatoes with olive oil, salt and pepper. Lay on parchment-lined baking sheet and bake 15-20 minutes, or until tender. Scoop out ¼ of inside of each potato half. Add guacamole, salsa and cheese. Return to oven and bake 2 minutes, or until cheese melts.
